To most Kochittes, it has become a daily routine to have a ‘chaaya and kadi’ (tea and snack) during evening time and there is no better time than a rainy evening to have some hot snacks and tea.

1) Parippuvada / Dal fritters

How to make

Step 1:  Soak the dal for 2 - 2.5 hours and drain the water completely.

Step 2: After drying the dal using a kitchen towel, grind the dal roughly, making sure it doesn’t turn into a paste . You want the dal to be crushed so that you can make it into a ball like shape.

Step 3: Add some onions and chillies into the crushed Dal and mix it. Make small balls from the mix and flatten it. (Make sure your hand is wet when you flatten the mix).

Step 4 : Fry it in hot oil and fry in a medium heat, so that you don’t want them to overcook them. After the vadas gets crispy and have light shade of dark brown, drain them in a tissue paper to get rid of the excess oil.

How to make
Step 1: Slice onions into a large bowl and add gram flour, rice flour,  red chilli powder, ginger, curry leaves, coriander leaves, baking soda, and salt.

Step 2: Mix well and keep aside for 5-10 minutes.

Step 3: Add water to the mix slowly and make sure the flour batter gets mixed well with onions. Make sure the batter doesn’t get too watery or too thin.

Step 4: Heat the pan with enough oil and check the oil is hot enough with a small drop of the mix. If the mix comes up immediately it means the oil is hot enough.

Step 5 : Fry the pakodas until it’s crispy and golden brown.

Step 6 : Drain the pakodas and put them on a tissue paper to drain out the excess oil.
